Celery Root- Celeriac

Celeriac, celery root is a large brownish root vegetable related to celery, parsley and parsnips that is usually harvested in late fall. It’s stems create a round mass which varies in size and shape.

Celery Root is mild in taste and is similar to celery, slightly sweet when cooked or roasted and slightly nutty.

Celeriac is nutritiously rich in fiber and vitamins B6, C and K. It’s also a good source of antioxidants and minerals, such as phosphorus, calcium, potassium, iron, magnesium, and manganese.

This large vegetable is very versatile. Besides mashing it, celery root can shredded, grated, sliced, cubed, roasted, grilled, steamed, baked and my favorite added to broth.

The leaves and stems of celery root are edible. They can be added to soups, stews, and salads.
