Vegetable Beef Stew

Ingredients:

4 garlic cloves grated
1 leek chopped
3 large carrots
1 white onion chopped
Salt & ground pepper, 2 tablespoons olive oil
2 cups frozen peas
3 cups broth
3 large potatoes cubed
2 cups beef cubes

Directions

1. Heat oil in a large pot. Saute the meat in the oil for 10 minutes, or until browned on all sides. Remove meat and set aside.
2. Add onion, leek, garlic, salt & pepper and saute. Add carrots, potatoes, broth meat and bring to a boil. Reduce heat and simmer for 1 hour.
3. Add peas and let stand for 10 mins.
4. Laddle stew into bowls.
