Celery Root Parsnip & Apple Soup

Ingredients

4 tbsp organic butter
1 large white onion- diced
2 garlic cloves- grated
Sea salt & grounded pepper to taste
2 cups celery root- peeled &cubed
3 cups parsnips- peeled & cubed
2 large apples-cored & cubed
1 can organic coconut milk
1/2 tsp nutmeg
5 cups bone broth (see website for recipe)

Directions

1. In a large pot, melt butter and add olive oil over medium-high heat.
2. Add diced onion, garlic, sea salt, and cook until soft about 5-7 mins.
3. Add parsnips, apples, celery root and cook until vegetables have browned and softened, 20-25 mins.
4. Add bone broth, coconut milk, and nutmeg.
5. Simmer for 25 mins. or until vegetables are soft.
6. Puree in a food processor or hand blender until smooth
7. Ladle into bowls
