Grapefruit, Avocado, Prosciutto Salad
Ingredients:
2 cups wild arugula
1 grapefruit- peeled and cut into small pieces
3 tablespoons grapefruit juice- squeeze from grapefruit
1 large avocado- peeled & sliced
6 thin slices of prosciutto- cut into small pieces
3 tablespoons slivered almonds or crushed pistachios
Instructions
1. Toss arugula into large bowl and add avocado, prosciutto, and grapefruit.
2. Squeeze grapefruit juice from fruit onto salad
3. Toss salad on top with almonds or pistachios
4. Serve on plate
