Poached Egg with Lox Salmon & Spinach


4 cups of organic baby  spinach (washed)
1 small red onion (thin sliver slices)
8 slices of salmon lox (cut into small pieces)
4  eggs
1 cup slivered almonds

1/4 cup olive oil
4 tablespoons organic apple cider vinegar
2 cloves minced garlic
2 tablespoons freshly squeezed lemon juice
1 tablespoon honey
Sea salt & ground pepper

1. In a pan melt 2 tablespoons of butter on low heat. Add slivered almonds and fry till light brown. Be careful as almonds can burn easily. Remove from heat and allow to cool.
2. Place a bed of spinach on plate
3. Add thin slices of red onion,sliced lox salmon and slivered almonds.
4. Bring a pan of water to boil. Turn down heat. Break 1 egg at a time into small bowl and gently slide into water. Allow to sit in water till egg is cooked to desired consistency, soft or hard egg.
5. Spoon out of water and allow water to drip out. Place on bed of spinach.
6. Combine all dressing ingredients together and mix.
7. Pour dressing onto poached egg and bed of spinach.

Servings 4- Prep time: 5 Minutes- Cook time: 2 minutes
