Red Cabbage Salad with Apple

2 cups red cabbage (finely chopped)
2 cups shreed organic carrots
1 organic apple
1/4 cup fresh parsley (chopped)

4 tablespoons apple cider vinegar
1/2 cup olive oil
2 tsp honey
1 tsp Dijon mustard
2 garlic cloves minced
Sea salt & ground pepper to taste
1 teaspoon lemon juice
1/4 teaspoon chile powder

1. In a medium serving bowl, combine the purple cabbage, carrots and parsley.
2. To make the dressing, combine all the ingredients and whisk until thoroughly blended.
3. Drizzle the dressing over cabbage, carrots & parsley until all of the ingredients are coated in dressing.
