Spaghetti Squash, a winter vegetable contains nutrients rich in vitamins C & B6, minerals manganese and potassium.
Yellow in color and melon shaped, spaghetti squash is a nutrient dense food, meaning it’s low in calories, rich in nutrients, and high in fiber which aids in digestion.
Spaghetti squash can be used as an alternative to traditional pasta or rice. When cooked the fibrous pulp becomes stringy resembling strands of spaghetti.
Cooking spaghetti squash is quite simple .Slice it in half, scoop out the seeds, drizzle olive oil and roast in the oven. Great when paired with meatballs, tomato sauce and parmesan cheese.
