Beet Stew with Beef & Cabbage

Salad Ingredient

2 medium beets (roasted) peeled, sliced
2 large handfuls organic baby arugula
4 tablespoons goat cheese (crumbled)
1/4 cup sliced almonds

Dressing Ingredients

3 tablespoons organic extra virgin olive oil
1 1/2 tablespoons lemon juice
1/4 teaspoon dijon mustard
1/2 teaspoon stevia, monk fruit or honey
1/2 teaspoon salt
1/4 teaspoon pepper


Salad dressing
1. Place dressing ingredients in a jar and shake. Adjust ingredients to taste.

Assemble the salad:
1. On a plate place a handful of arugula leaves, chopped beets, crumbled goat cheese, and sliced almonds
2. Drizzle the salad with dressing
