Chilled Salmon with Cucumber & Yogourt
Ingredients:
1 English Cucumber washed & cut into rounds
Sea Salt & pepper to taste
3 tablespoons yogourt
Fresh Mint
1 garlic clove (grated)
lemon juice
1 tbsp un-pasteurised honey
1 Salmon Steak
Directions
1. Season salmon on both sides with salt and pepper. In a large skillet over medium-high heat, heat oil and butter. Add salmon and cook until bottom is golden, 5 minutes, then flip.
2. Add garlic, lemon juice, honey. Cook until salmon is cooked through, another 5 minutes, spooning sauce over salmon as it cooks. Allow to cool for 20 minutes..
3. Arrange the cut cucumber slices on a large plate in a circular manner and top with salmon.
4. Drizzle with a spoonful of yogourt. Garnish with mint leaf.
