Creamy Potato Leek Soup
3 tbsp organic olive oil
2 leeks- coarsely chopped
2 garlic cloves- minced
3 potatoes- peeled & cubed
3 cups broth- see website for recipe
1 cup half & half cream
Himalayan or Sea salt- to taste
Freshly ground pepper- to taste
Instructions
1. In a large soup pot warm oil over medium heat.
2. Add leeks, garlic and saute for 10 mins.
3. Add potatoes, and continue to saute.
4. Add the stock and simmer for 30 mins.
5. In a food processor or blender puree the soup in batches until smooth and return to the pot
6. Pour in warm half & half cream. Must be warm for it not to curdle
6. Return the soup to the pot and reheat.
7. Ladle the soup into bowls.
