Chicken Pot Pie


2 1/2 cups cubed organic chicken breast or thighs
1 cup organic sliced carrots
1 cup organic frozen peas
1/3 cup chopped onion
3 garlic cloves grated
1/3 cup all purpose flour
Sea salt and ground pepper to taste
1 1/2 cups bone broth (see recipe on website)
1/2 cup whipping cream
2 tablespoons butter
2 nine inch unbaked pie crusts


1. Preheat oven to 400 degrees F

2. In a saucepan, combine chicken, carrots, peas. Add bone broth and boil for 15 minutes. Remove from heat and set aside.

3. Over medium heat, cook onions & garlic in butter until soft. Stir in flour, salt, pepper. Slowly stir in chicken broth mixture and whipping cream. Simmer over medium-low heat until thick. Remove from heat and set aside.

4. Pour the chicken mixture in bottom of pie crust. Cover with top crust, seal edges, and cut away excess dough. Make several small slits.

5. Bake in the preheated oven for 30 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.
