Organic Baby Spinach Salad



4 cups organic baby spinach
2 large organic apples, (cored & thinly-sliced)
Half small red onion (thinly-sliced)
1 cup of crumbled goat cheese
1/4 cup thinly sliced mushrooms
4 hard boiled eggs (sliced in quarters)

1/3 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 garlic clove, peeled and minced
Sea salt & ground pepper to taste
1 tablespoon honey


1. Bring 4 eggs to a boil in water and cook for 10 mins. Remove from heat,drain hot water and pour cold water along with ice cubes into pot. Let stand for 5 mins. When eggs are cool to the touch peel, and slice into quarters.

Add spinach, apples, red onion, and goat cheese to a large bowl. Drizzle with the vinaigrette, and toss to combine.Add quarters of boiled egg.
Add all ingredients to a mason jar, cover, and shake to combine.
Drizzle dressing on salad.
