Chocolate Beet Cupcakes


1-2 beets (the equivalent of 1/2 cup pureed)
1 cup keffir
1 tsp apple cider vinegar
3/4 cup monk fruit or stevia
5 teaspoons coconut cream
1/4 cup coconut oil
2 teaspoons vanilla extract
1 cup pastry flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
sea salt (pinch)

1. Preheat oven to 375F. Wash beets, wrap in tinfoil and cook for 1 hour or until tender.
2. Place beets into ice cube water and cool. Peel and place in blender with 3 tablespoons of water until smooth.
3. In a large bowl add the sugar, vanilla extract, beet puree, kefir.
4. Add sea salt, cocoa powder, baking soda, baking powder and pastry flour and sift into wet ingredients. Combine till all ingredients are mixed.
5. Pour batter into top of liners. Bake for 20-25 mins. Transfer to cooling rack.
6. Once cool sprinkle with cocoa powder
