Snap Peas with Mushrooms & Pistachios


2 cups snap peas (washed)
1 small onion (finely chopped)
3 cloves of garlic (grated)
1 teaspoon minced fresh gingerroot
3 tablespoons organic olive oil
1/2 cup pistachios (ground)


1. In a large skillet saute the peas, garlic, gingerroot, onion until crisp-tender.

2. Place on plate and sprinkle with pistachios. Serve immediately.

Preparation time: 10 mins.
Cooking time: 4 minutes
