Curry Sweet Potato Soup


4 cups bone broth (see recipe on website)
1 tablespoon olive oil
1 onion white
1 tablespoon grated ginger
3 garlic cloves minced
1 tablespoon curry paste
2 carrots peeled and cubed
4 cups sweet potato peeled and cubed
1 cup dried red lentils
1/2 lime juiced
1/4 teaspoon sea salt
1 tablespoon fish sauce
1 can coconut cream
1 tablespoon roasted pumpkin seeds for topping


1. Heat olive oil in soup pot.
2. Add onion, garlic, ginger and cook for 5-8 mins. Add curry paste and stir.
3. Add sweet potato, lentils, carrots fish sauce, lime juice salt, & bone broth.
4. Bring to a boil, reduce heat and simmer for 25 mins. or until lentils and sweet potato are cooked.
5. Pour soup into blender and puree.
6. Pour soup back into pot and stir in coconut cream

Prep time: 10 mins  Cooking time: 30 mins.
