Lentil Soup


2 carrots (peeled & chopped)
1 potato (peeled & chopped)
1 white onion (peeled & chopped)
3 cloves of garlic (minced)
1 celery stalk
Sea salt & ground pepper (to taste)
2 cups swiss chard (chopped)
1 cup strained tomatoes
1 cup diced tomatoes
5 cups bone broth (see website for recipe)
3 tablespoons olive oil
1 1/2 cups lentils
1/2 lime (sliced)
1 teaspoon curry powder

1. Warm oil in a saucepan
2. Add onion, carrot, garlic, and saute for 5 mins. Stir in curry powder.
3. Add strained tomatoes ,bone broth, lentils & lime slices. Bring to a boil. Reduce heat & simmer for 35 mins. or till lentils are tender.
4. Remove lime slices. Stir in chopped swiss chard & allow to wilt.
5. Season with salt & pepper
6. Serve in bowls.
