Lettuce with Prosciutto, Eggs & Dill Dressing


3 cups of salad greens of choice (romaine, arugula, spinach)  (washed,dried & chopped)
8 slices prosciutto
4 eggs cooked in boiling water for 8 minutes, cooled & peeled
2 small tomatoes
1/4 cup Parmigiano-Reggiano cheese (grated)

Dill Dressing
1/2 cup buttermilk or keffir
2 Tbsp mayonnaise
2 tbsps lemon juice
1/4 cup chopped parsley
4 Tbsp chopped dill
1 Tbsp dijon mustard
1 Tsp onion powder
Sea salt & black pepper to taste


Dill Dressing
1.Combine all of the ingredients in a small bowl and whisk together until combined.

1. Randomly place the chopped greens on a large platter.
2. Drizzle a little dill dressing on top.
3. Place the prosciutto over the lettuce and scatter the egg & tomato wedges over the salad.
4. Drizzle with more dill dressing.
5. Using a grater top the salad with Parmiagano-Reggiano cheese.
