Naleszniki- Polish Crepes

Ingredients:

1 egg
1 cup flour
1/3 cup water
1 teaspoon vanilla
1 tablespoon butter (melted)
1 cup milk
Olive oil

Topping
1 cup Wild blueberries, 1/4 cup melted dark chocolate

Filling
1 cup ricotta cheese

Directions
1. Beat 1 egg in bowl until frothy. Add 1/3 cup water,vanilla, melted butter, milk and beat well.
2. Add flour and mix until you have a thin batter.
3. Place 1/2 teaspoon of oil in hot frying pan.
4. Add 1 full soup ladle of batter to frying pan. Swirl the the batter until it reaches the outer edges of the pan. Allow to brown slightly for 1 minute.
5.Using a spatula flip the crepe to the other side for same amount of time.
6. Remove and place on plate. Repeat step 4 until batter is gone.
7. Fill crepe with ricotta cheese and roll up.
8. Place frozen wild blueberries in 1 tablespoon of water and bring to a boil. Blend wild blueberries in blender until smooth.
