Omelette
Ingredients:
3 eggs
1 small zucchini
1 small onion
3 tablespoons chunky salsa
Salt and pepper
1 handful crumbled goat feta cheese
1 tablespoon olive oil
1 teaspoon butter
3 tablespoons pine nuts
1 small avocado
Directions:
- Combine olive oil and butter in frypan
- Cut onion into small pieces. Grate zucchini and along with salsa add to fry pan. Cook until onions and zucchini are tender
- Whip 3 eggs and add to frypan
- Add crumbled feta cheese and cook until done
- Place omelette on plate and add avocado on the side. Top with pine nuts
