3 eggs
1 small zucchini
1 small onion
3 tablespoons chunky salsa
Salt and pepper
1 handful crumbled goat feta cheese
1 tablespoon olive oil
1 teaspoon butter
3 tablespoons pine nuts
1 small avocado


  1. Combine olive oil and butter in frypan
  2. Cut onion into small pieces. Grate zucchini and along with salsa add to fry pan. Cook until onions and zucchini are tender
  3. Whip 3 eggs and add to frypan
  4. Add crumbled feta cheese and cook until done
  5. Place omelette on plate and add avocado on the side. Top with pine nuts
