Polish Cucumber Salad


4 small cucumbers (peeled and thinly sliced)
3 tablespoons sour cream
1 pinch stevia
1 teaspoon lemon juice
Ground pepper (to taste)
Sea salt (to taste)


  1. Place cucumbers in a bowl. Sprinkle with salt. Let stand till cucumbers are soft, about 20 mins.
  2. Squeeze liquid from cucumbers and pat with paper towel. Discard excess liquid.
  3. Combine lemon juice, stevia, and sour cream in a bowl. Add to cucumbers and toss. Season with black pepper and sprinkle dill.
  4. Chill before serving.
