Potato Leek Fennel Soup


3 tbsp organic olive oil
2 leeks- coarsely chopped
2 fennel bulbs- thinly sliced
2 potatoes- chopped
6 cups broth- see website for recipe
Sea salt
Freshly ground pepper
Fresh dill for topping

1. In a large soup pot warm oil over medium heat.
2. Add leeks, and saute for 10 mins.
3. Add  fennel, potatoes, and continue to saute.
4. Add the stock and simmer for 30 mins.
5. In a food processor or blender puree the soup in batches until smooth and return to the pot.
6. Return the soup to the pot and reheat.
7. Ladle the soup into bowls.
8. Sprinkle with fresh dill
