Lentil & Butternut Squash Soup
Lentils are a good source of plant protein rich in iron, magnesium, potassium, zinc, and B vitamins, and an excellent meat alternative as they are made up of over 25 percent protein. Lentils are also rich in dietary fiber which support gut function and overall gut health.
Ingredients
2 Tbsp organic olive oil
2 red onions- finely chopped
2 garlic cloves- minced
1 medium butternut squash- peeled and chopped
2/3 cups dried lentils
4 cups bone broth or vegetable broth- see website for recipe
1 lemon- juice squeezed
freshly ground pepper- to taste
sea salt- to taste
Instructions
1. Heat the oil in a saucepan over medium heat. Add the onions, garlic and cook for 5 minutes or until softened
2. Add butternut squash, lentils, and broth. Bring to a boil and then reduce heat and simmer for 35-40 minutes or until both butternut quash and lentils are soft.
3. Remove from heat and transfer to a food processor or blender.
4. Add the lemon juice and blend mixture until creamy and smooth
5. Season to taste with sea salt and freshly ground pepper.
6. Ladle into bowls and serve.
