Pumpkin Pie


2 organic eggs
2 cups roasted pumpkin puree
1 1/2 cups half & half cream
1/2 cup monk fruit sweetener
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon grated or ground nutmeg
1/4 teaspoon ground cloves or all spice
1/2 teaspoon salt
20 ml pumpkin seed oil
10 ml vanilla
1 9 inch single-crust pie

1. Pre-heat oven to 375.
2. Slice pie pumpkin and remove seeds.
3. Drizzle with organic olive oil and lay flat on cookie sheet. Cook for 45-60 mins. or until pumpkin is soft.
4. Remove pumpkin from oven and allow to cool.
5. Puree in blender and set aside.
6. Add remaining ingredients to blender along with the pumpkin puree and blend till mixed.
7. Warm the pie crust in the oven until it is hot to the touch.
8. Pour the pumpkin mixture into the crust and bake for 35-45 minutes or until firm.
