Swiss Chard Salmon Lox Salad


3 cups swiss chard (washed and chopped)
4 tablespoons crumbled organic goat feta
6 brussel sprouts (washed and finely chopped)
1/4 cup finely chopped shallot
3 pieces salmon lox
8 cherry tomatoes
3 teaspoons fresh or dry dill

1/3 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 garlic clove, peeled and minced
Sea salt & ground pepper to taste
1 tablespoon honey

Add all ingredients to a mason jar, cover, and shake to combine.
Drizzle dressing on salad


1. Add swiss chard, brussel sprouts, shallot, salmon lox and goat cheese to a large bowl. Drizzle with the vinaigrette, and toss to combine. Sprinkle with dill.
