Poached Egg Salmon Lox on Swiss Chard


1/2 cup swiss chard (washed and chopped)
1 poached egg
1/4 cup finely chopped shallot
2 pieces salmon lox (cut into small pieces)
1 teaspoon organic olive oil
Sea salt and ground pepper to taste


1. Add olive oil to warm pan along with swiss chard. Fry till swiss chard is soft.
2. In small pan boil water and add egg. Allow to boil for 1 minute.
3. Scoop egg from water.
4. Place swiss chard on plate and add the egg and salmon lox. Add sea salt and ground pepper to taste.

Serves 1 person
