Vegetable Soup


3 tablespoons organic olive oil
1 leek – chopped
4 organic carrots- peeled & sliced
2 sweet potatoes- washed, peeled & sliced
3 small potatoes – washed & chopped
3 garlic cloves- peeled & minced
2 shallots- finely sliced
1 celery stick- washed & cut into small pieces
1/4 cup strained tomatoes
Parsley- dried or fresh
1 tsp organic un-pasteurized honey
6 cups bone broth- see recipe below

1. In a large saucepan warm the oil. Add shallot, leek, garlic, honey and saute until softened.
2. Add carrots, sweet potatoe, potatoe, & celery
3. Pour in broth and add strained tomatoes
4. Bring to a boil and then simmer for 30-40 mins.
5. Ladle soup into bowls and garnish with parsley

Prep time: 20-30 mins   Serves 6 people Cooking time: 40 mins.
