French Onion Soup


2 tbsp organic olive oil
4 large red onions, peeled 7 thinly sliced
1 tsp honey
4 leeks washed & thinly sliced
3 cloves garlic- minced
6 cups broth – see recipe below
1/2 cup dry white wine
Sea salt & freshly ground pepper
12 slices baguette, 1/4 inch thick
3/4 cup Gruyere cheese- shredded

1. In a large saucepan over medium heat warm the oil. Add the onions, leeks and honey. Continue cooking until caramelized 30-45 mins.
2. Add the garlic to saucepan and saute. Add broth, wine, sea salt & ground pepper. Simmer for 40 mins.
works great for this.
3. Preheat the broiler. Ladle the soup into individual oven proof soup bowls.
4. Place 2 slices of toasted bread into each bowl and sprinkle with cheese.
5. Place in oven and broil until the cheese is bubbly and lightly browned 2-3 mins.
6. Serve immediately.
