Avocado, Spinach & Poached Egg on Toast
Ingredients
1 or 2 eggs (poached)
1 small organic ripe avocado (sliced, mashed & pitted)
1/2 cup organic baby spinach
1 piece of sour dough (toasted)
Sea Salt & pepper to taste
Sunflower Or pumpkin seeds
INSTRUCTIONS
1. Bring a small pot of water to a boil. Stir in vinegar.
2. Crack the egg into a small bowl. Carefully slip the egg to the middle of the pot and cook as desired. Remove the egg with a slotted spoon to leave any liquid behind.
3. Mash or slice avocado and spread on toast.
4. Place fried or raw spinach and poached egg on toast.
5. Season with salt & pepper
6. Sprinkle with seeds
