Zucchini Loaf


2 1/2 cups flour
2 tsp ground ginger
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1/2 tsp ground nutmeg
1/2 tsp ground allspice
3/4 cup packed brown sugar
2 organic eggs
3/4 cup buttermilk
1/3 cup butter, melted
2 tsp grated lemon rind
1 1/2 cups shredded zucchini


1. Preheat oven to 350 F
2. In a large bowl combine, flour, baking powder, baking soda, all spice, ginger, and nutmeg.
3. In a separate bowl whisk together sugar, eggs, buttermilk, butter, lemon rind.
4. Pour over the dry ingredients and add zucchini. Stir together all ingredients until combined.
5. Spread into a greased 9×5 inch loaf pan. Bake for 60- 70 minutes or until the centre of a toothpick inserted into the centre comes out clean.
7. Cool in pan for 10 minutes, then remove from pan onto rack and cool.
