Carrot & Parsnip Soup

Ingredients:

1 large white onion- chopped
1 garlic clove- peeled and grated
3 tbsp organic butter
1 tbsp organic olive oil
1 lb organic carrots- peeled & chopped
3 parsnips- peeled & chopped
1 tbsp orange zest
4 cups bone broth- see website for recipe
1/2 cup of half & half cream
Sea salt and ground pepper – to taste
Cilantro for garnish

Directions:

1.Melt butter together with oil over low heat in a pot
2. Add onion, garlic, ginger and cook until softened.
3. Add carrots, parsnips, orange zest and bone broth
4. Bring to a boil and simmer for 30 minutes or until the vegetables are tender
5. Remove from heat
6. Transfer the soup to a food processor or blender and process until smooth
7. Pour ingredients back into pot and stir in the cream
8. Season with sea salt and ground pepper
9. Ladle into soup owls and garnish with cilantro
