Beet Soup- Barszcz Czerwony
Beet soup also known as Barszcz Czerwony is an authentic Polish soup made from beets with a see through consistency which can be served in bowls or in mugs to drink.
Eating Barszcz makes me happy and I’ve eaten it my entire life. The color is beautiful, the scent is aromatic and the soup warms me to my Polish core. My favorite time to eat this soup is on Christmas Eve with potato & cheese perogies.
Ingredients:
8 cups bone or vegetable broth- see links below on website
2 cloves of garlic- peeled
1 tbsp apple cider vinegar, or white vinegar
5 medium beets- peeled & roasted
Pinch of sea salt & pepper
1 tsp organic butter
1 tsp organic honey
Directions
1. Scrub beets under water and remove dirt
2. Wrap beets in parchment paper and place on cookie in oven for 1 hour.
3. Remove from oven and cool in water. Peel the beets, grate into bowl set aside.
4. In large pot add bone broth, beets, and garlic
5. Bring to a boil and simmer for 40 minutes
6. Add sea salt, pepper, butter, honey, and vinegar. Simmer for an additional 5 minutes
7. For a clear broth, strain into a large pot and ladle into bowls or large cup
