Tomato Soup

Ingredients:

2 Tbsp organic butter
1 Tbsp organic olive oil
2 shallots, diced
2 cloves of garlic, minced
1 can 796 ml, 28fl oz of organic tomatoes
2 Tbsp honey
Sea salt & pepper, to taste
1 cup of broth, see recipe below
2 organic chicken breasts
1 cup egg noodles

INSTRUCTIONS

Chicken
1. Pre-heat oven to 375.
2. Rub chicken breasts with butter and organic olive oil and sprinkle with salt and pepper.
Pat the chicken dry and rub with a little butter or olive oil, if desired. Sprinkle with salt, pepper.
3. Place breasts in the baking dish. Add 1 cup of broth so that the chicken is completely covered in broth.
4. Bake for 25-30 mins. or until cooked
5. Remove from oven and set aside.

Noodles
1. Place egg noodles in pot and boil for 5-6 mins. Cook until al dente
2. Drain and set aside

Soup
1. Sauté shallots & minced garlic with butter & olive oil for 5 mins. or until soft
2. Stir in tomatoes with juice, broth, salt, pepper. Bring to a boil & reduce heat and simmer for 15 mins.
3. Blend in blender in batches and return soup into pot
4. Add sliced chicken into bowls along with egg noodles
5. Ladle soup into bowls.
