Green Cabbage & Shredded Carrot Stir Fry with Chicken
Green cabbage is a dense leafy vegetable that belongs to the cruciferous vegetable group. It is a nutrient-rich vegetable full with minerals, fiber and vitamins such as folate, manganese, vitamin B6, calcium, and potassium. Cabbage is also known for its high content of vitamins C and E, as well as various phytochemicals like luteolin, myricetin, quercetin, and polyphenols
Ingredients:
2 cups green cabbage- finely cut
2 cups organic carrots- grated
2 cloves garlic- grated
1 shallot- finely cut
2 organic chicken breasts- thinly sliced
1/4 cup bone broth- See website for recipe
Sea salt & freshly ground black pepper
2 tbsp organic olive oil
Instructions
1. Add olive oil to cast iron skillet over warm heat.
2. Add the sliced chicken and fry for 5mins. and add bone broth
3. Add cabbage, carrots, garlic shallot.
2. Cook for 5-10mins. or until tender but still crisp
3. Serve on plate
