Roasted Brussel Sprouts

INGREDIENTS
2 cups Brussel sprouts- sliced in half
3 garlic cloves- peeled & grated
Sea salt & pepper- to taste
2 tbsp fig balsamic vinegar
1/4 cup organic olive oil
1/4 cup roasted pistachios- chopped

INSTRUCTIONS
1. Heat the oven to 375F.
2. Remove any dirt or dry outer leaves from the Brussel sprouts and cut in half
3. In a large bowl combine the Brussels sprouts, sea salt, pepper, olive oil, garlic and mix together.
4. Line a cookie sheet with parchment paper and place Brussel sprouts evenly in a single layer
5. Place pistachios on a separate cookie sheet and spread out evenly
6. Roast both Brussel sprouts & pistachios for 20-30 mins. or util tender
7. Remove from the oven. Place in a serving bowl. Toss in pistachios and drizzle with fig balsamic vinegar

Prep time: 15 mins   Cooking time: 20-30 mins.   Serves: 4 people
