Hemp-Crusted Salmon

Ingredients

4 Salmon fillets
2 teaspoons olive oil
1/2 cup hemp hearts
1/2 cup grated parmesan cheese
1 teaspoon dried basil
1 teaspoon dried parsley
2 teaspoons lemon juice
Sea salt & ground pepper, to taste
Lemon slices, for serving

Instructions

1. Preheat oven to 400 F. Line baking sheet with parchment paper and place salmon.
2. Combine hemp hearts, parmesan cheese, parsley, basil, olive oil & lemon juice in a bowl.
3. Cover the top of each fillet with mixture.
4. Place salmon in oven and bake for 10-15 minutes or until salmon flakes easily.
5. Broil the salmon for the last 2 minutes to get a crisp crust.

Prep time: 10mins. Cooking time: 15 mins
