Lentil  Stew with Sausage

Ingredients

4 Tbsp olive oil
1 cup organic strained tomatoes
3 tablespoons organic honey
1 carrot, peeled and diced
1 onion diced
1 celery stalk, diced
4 cloves of finely minced garlic
1 tomato, chopped
1 1/2 cups green lentils
4 cups bone broth (see website for recipe)
1 tsp sea salt & ground pepper
4 sausages (either beef, bison, elk, pork)

Directions

1.Pour the olive oil into a soup pot. Add the onion, carrot, celery and garlic, salt & pepper. Stir and cook for 10 minutes. Add the tomato and stir.
2. Add the lentils, and coat with the oil in the pan.
3. Pour in the bone broth and bring to a boil. Allow to simmer for 30-35 minutes or until heat, lowering the pace to a slow, steady simmer. Cover and continue cooking until the lentils are tender around 30 minutes. Add strained tomatoes and liquid honey.
4. Coat your fry pan with olive oil and brown for 15-20 minutes. Transfer whole or cut up sausages to the simmering pot of lentils.
5. Serve in a bowl
