Pumpkin Creamy Goat Cheese Muffins

Pumpkin- Loaded with Good Nutrients


Wet Ingredients

3 organic eggs, room temperature
3/4 cup canned pumpkin purée, or pumpkin puree
1/2 cup of creamed goat cheese
2 tablespoons olive oil
2 tablespoons honey or
1/4 cup almond milk, (unsweetened)

Dry Ingredients

1/2 teaspoon baking soda
1 teaspoon baking powder
2 1/2 cups fine almond flour

Preheat the  oven to 375°F. Spray muffin pan with organic olive oil or fill with muffin liners


1. In a bowl combine the wet ingredients with the goat cheese and whisk together.
2. Add the dry ingredients to the wet ingredients and combine.
3. Using a large spoon or an ice cream scoop scoop batter into muffin liners.
4. Bake for 20-25 minutes or until a toothpick inserted in the middle comes out clean.
5. Place on cooling rack and enjoy.
