Romaine  Salad with Anchovy Dressing

Ingredients:

3 cups romaine lettuce- washed  and chopped
1/4 cup parmesan cheese – shredded

Salad dressing
1 teaspoon Dijon mustard
5 teaspoons organic extra virgin olive oil
2 garlic cloves – peeled
1 teaspoon lemon juice
1 can anchovy fillets
Sea salt and freshly ground black pepper

Instructions

1. Toss romaine lettuce into large a bowl.
2. Combine mustard, lemon juice, oil, garlic, anchovies ,salt and pepper in a blender. Blend until combined and smooth
3. Combine dressing and salad together
4. Serve on plate. Top with shredded parmesan cheese and serve.
