Arugula Salad

Ingredients:

3 cups arugula
5 organic cherry tomatoes or 1 large tomato- cup in 1/8
1 organic celery stick- finely diced
1 organic carrot- finely diced
1 organic green onion- finely cut

Salad dressing
1 teaspoon Dijon mustard
2 teaspoons apple cider vinegar
1/4 cup organic extra-virgin olive oil
1 teaspoon honey
Sea salt and freshly ground black pepper

Instructions

1. Toss arugula into large bowl and add tomatoes, celery, carrot, and green onion.
2. Combine mustard, vinegar, oil, honey and salt and pepper in a jar and shake to emulsify
3. Combine dressing and salad together
4. Serve on plate
