Lemon Curd Blueberry Tart

Ingredients

Lemon Curd

2 organic eggs
2 organic egg yolks
1/3 cup honey
1/2 cup squeezed organic lemon juice
zest from 2 organic lemons
sea salt, pinch
6 tbsp coconut oil

Dough

2 cups almond flour
1 cup arrowroot
1 tsp sea salt
1 tsp vanilla
1/3 cup maple syrup or organic honey
1/4 cup organic coconut oil melted

Topping
1 cup organic wild blueberries, washed and dried

INSTRUCTIONS

1. Preheat oven to 350F

Lemon Curd

1. Remove egg white from 2 eggs and set aside.
2. In a bowl whisk together eggs, yolks, lemon juice, lemon zest, honey, and sea salt. Add coconut oil.
3. Pour into saucepan and heat on low until all ingredients are melted and combined.
4. Turn up and gently whisk until the mixture thickens, about 5-7 minutes.
5. Remove mixture from heat and strain through a sieve.
6. Pour into mason jar and refrigerate.
7. Chill for at least 1 hour before serving. The curd will continue to thicken as it sets.

Dough

1. In a bowl combine flour, arrowroot, sea salt and mix ingredients
2. Add vanilla,, honey, & coconut oil. Combine all ingredients.
3. Press dough into pie plate.
4. Bake at 350F for 20 mins or until golden brown.
5. Remove from oven & allow to cool.
6. Spread lemon curd onto crust.
7. Place blueberries into the lemon curd and chill your tart until you are ready to serve.
