Pumpkin Stew

1 ½ tablespoons organic olive oil
1 medium white onion, grated
2 garlic cloves, grated
1 pound organic ground beef or bison
3 cups broth, see recipe on website
2 medium sweet potatoes, diced
1 cup puree pumpkin, see recipe on website
3 cups kale or spinach, bite-sized pieces
1 cup coconut cream
2 tablespoons dried basil
Black pepper, to taste
Sea salt, to taste
1/4 tsp nutmeg

1. In a large pot on medium-high heat add onions, garlic and nutmeg. Saute for about 5 minutes, stirring on occasion, until the onions are soft and begin to caramelize.
2. Add the ground meat, beef or bison to the pot and cook until browned, 5-7 minutes. Add all remaining ingredients, sweet potato, puree pumpkin, salt & pepper to the pot.
3. Simmer until sweet potato is soft.
4. Add the kale or spinach , coconut cream. Simmer for 25 mins.
5. Ladle in bowls & serve.

Prep time: 25 mins.  Cooking time: 30 mins.  Serves: 6
