Pear Bread

Soft juicy pears work well with this recipe.


3 organic large eggs
3 tablespoons Monk Fruit extract
3/4 cup organic olive oil
1 teaspoon vanilla extract
3 cups organic flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon sea salt
2 teaspoons ground cinnamon
4 cups shredded ripe pears (peeled)
1 teaspoon lemon juice


Preheat oven to 350

1. In a bowl, combine the eggs, sugar, oil and vanilla; mix well.
2. In a separate bowl combine flour, baking powder, cinnamon, baking soda and sea salt.
3. Combine egg mixture with dry mixture and mix together.
4. Toss pears with lemon juice and combine with the wet mixture
5. Spoon into 2 greased 9×5-inch loaf pans and bake at 350° for 55-60 minutes or until a toothpick inserted in the center comes out clean.
6. Cool for 10 minutes before removing from pans to wire racks.
