Roasted Vegetable Medley
Ingredients:
3 large carrots (cubed)
1 large beet (cubed)
4 cloves garlic (sliced in half)
1 large sweet potato (cubed)
Sea salt, ground pepper to taste
2 Tbsp organic virgin olive oil
Dressing
2 Tbsp lemon juice
2 Tbsp organic virgin olive oil
1 Tbsp honey
1 clove garlic (minced)
Instructions
1. Preheat oven to 375 degrees
2. Place vegetables into large bowl.
3. Drizzle with olive oil, mix and toss evenly
4. Transfer vegetables to baking dish
5. Roast in oven for 35-40 mins. or until tender
Dressing
1. Combine lemon juice, olive oil, honey, garlic, salt &m pepper into a container and mix until combined
2. When vegetables are done, toss dressing to coat
