Tomato Soup


2 Tbsp organic butter
1 Tbsp organic olive oil
2 shallots, diced
2 cloves of garlic, minced
1 can 796 ml, 28fl oz of organic tomatoes
2 Tbsp honey
Sea salt & pepper, to taste
1 cup of broth, see recipe for broth
1 cup of cream
Parmesan cheese, grated
Basil, dry or fresh


1. Saute shallots & minced garlic with butter & olive oil
2. Stir in tomatoes with juice, broth, salt, pepper. Bring to a boil & reduce heat and simmer for 10 mins.
3. Blend in blender in batches and return soup into pot
4. Add warm cream and stir
5. Ladle soup into bowls and garnish with parmesan & basil
