Stuffed Portobello Mushrooms


4 portobello mushrooms
1 pound organic ground beef, turkey, or bison
1 shallot (finely chopped)
2 cloves of garlic (minced)
Sea salt & pepper (to taste)
6 tablespoons tomato paste
2 handfuls of parmesan cheese (finely grated)
4 toothpicks
4 cherry tomatoes

1. Set oven at 375F
2. Cook meat, onion, and garlic for 5 mins. Drain away excess fat. Scoop meat into bowl. Add tomato paste, parmesan cheese salt, & pepper. Mix thoroughly until all ingredients are combined.
3. Clean mushrooms by wiping away any debris with a clean paper towel. Split mushrooms in half.
4. Place mushrooms on baking sheet.
5. Divide the meat mixture between half of the mushroom caps. Place half of empty mushroom cap on top. Insert toothpick along with cherry tomatoe.
6. Bake at 375F for 20-30 mins or until the mushrooms are tender.

Prep time: 25 mins. Cooking time: 20-30 mins. Serves 6
