Avocado, Tuna & Tomatoes


2 avocados, pitted, halved, scooped & chopped
1 can of tuna
1 lemon, zest & juice
1 green onion
1 tsp of organic olive oil
4 cherry tomatoes, halved
Chopped fresh parsley, handful
Sea salt, to taste
Ground pepper, to taste

1. Toss the tuna into a bowl & flake part with a fork. Add olive oil & lemon juice/zest
2. Toss in the halved tomatoes, sprinkle salt & pepper & sprinkle on parsley.
3. Place avocado shell on plate and scoop in filling.
