Zucchini Fritters


1/2 cup brown rice flour or whole wheat flour
1 teaspoon baking powder
2 organic egg
1 cup milk, keffir or buttermilk
1 large zucchini
2 tbsps dried or fresh thyme
1 tbsp organic olive oil
Sea salt (to taste)
Ground pepper (to taste)
Sour cream, yogourt, for topping


1. Combine your choice of milk,keffir or buttermilk & eggs into bowl. Mix together.
2. Sift flour and baking soda together. Add slowly into wet mixture.
3. Shred zucchini over paper towel for absorption of juices.
4. Add zucchini, thyme, salt & pepper
5. Heat the olive oil in skillet over medium heat. Drop small ladle spoon of batter into the skillet.
6. Fry for 4 minutes on each side or until golden brown
7. Place fritters one by one on plate lined with paper towels in order to absorb the oil
8. Place on plate. Top with sour cream or yogourt
