Spinach Salad


4 cups organic baby spinach
2 large organic apples, (cored & thinly-sliced)
Half small red onion (thinly-sliced)
1 cup almond slivers (toasted)
1 cup of crumbled goat cheese
1/4 cup thinly sliced mushrooms
1 cup mandarin oranges

1/3 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1 garlic clove, peeled and minced
Sea salt & ground pepper to taste
1 tablespoon honey

1.Add spinach, apples, red onion, almonds and goat cheese to a large bowl. Drizzle with the vinaigrette, and toss to combine.
1. Add all ingredients to a mason jar, cover, and shake to combine.
Drizzle dressing on salad
