Wild Blueberry Sauce


2 Tablespoons organic olive oil
1 shallot (diced)
1 cup organic wild frozen blueberries
2 Tablespoons apple cider vinegar
1 tbsp grated garlic
3 tbsp honey
1 cup unsweetened applesauce
1 tsp dijon mustard
Sea Salt (to taste)
Ground Pepper (to taste)


1. In a pot heat the olive oil. Add shallots and garlic and cook until transparent. Add the blueberries to the onion mixture, cover and cook for 10 minutes.
2. Add the apple cider vinegar, honey dijon mustard, and unsweetened applesauce. Cook for five more minutes.
3. Pour the mixture into a blender and puree in batches. Season to taste with sea salt and fresh pepper.
4. Serve on the side with chicken, turkey, salmon, or scallops
